Steak or Chicken Fajitas MARINADE: 1 cup water 1 teaspoon oregano 1 teaspoon white pepper 1 teaspoon sea salt 1 teaspoon cumin 1 teaspoon chili powder Pinch ground cloves 4 crushed cloves garlic 1/4 cup red wine vinegar 1 orange and 1 lemon, juiced Small bunch cilantro, chopped 1/2 cup extra virgin olive oil FAJITAS: 1 pound flap meat or chicken breasts, marinade for about 1 hour 4-6 corn tortillas 1 green bell pepper, cut into long strips 1 red bell pepper, cut into long strips 1 white onion, cut into long strips MARINADE: Place all ingredients in bowl, saving oil for last. Slowly whisk oil into marinade, whisking the entire time. Marinate steak or chicken in the refrigerator for about 1 hour. Reserve some of the marinade for cooking in the sauté pan. FAJITAS: Preheat grill on high. Place steak on grill. Wrap up corn tortillas in foil and place on top shelf of grill. Turn steak, cooking 5-8 minutes each side. Slice onions and bell peppers. Remove steak from grill and let it rest a few minutes. Next, cut into strips against the grain. Preheat a sauté pan over high heat. After 1 minute, add 2 tablespoons vegetable oil. Add peppers and onions. Cook 2 minutes, then add steak slices. Pour in 2 tablespoons reserved marinade and cook over high heat another minute or so. Remove from pan. Place a small mound of fajitas on each corn tortilla and top with fresh guacamole. Chicken Marsala Recipe Chicken recipes are popular in the home kitchen. This Chicken Marsala recipe is one of those quick and easy chicken recipes using wine and mushrooms. Chef Jason Hill of Chef Tips shows you how to cook Chicken Marsala. Recipe: 4 boneless, skinless chicken breast halves, pounded to about 1/4-inch thickness between two sheets of plastic wrap 1/2 cup all purpose flour 1 teaspoon salt 1 teaspoon fresh cracked pepper 1 tablespoon dried oregano 4 tablespoons extra virgin olive oil 12 mushrooms, sliced 1/2 cup marsala wine 1/4 cup sherry wine First, pound the thawed chicken breast to about 1/4 inch thickness between two sheets of plastic wrap. Next, in a 13x9 casserole dish, mix together the flour, salt, pepper and oregano and mix well. Coat chicken breasts on both sides in flour mixture. Next, heat olive oil and butter in a large skillet over medium-high heat. When butter is melted, add the chicken and fry each side until browned, about 3 minutes on each side. Next, add sliced mushrooms to skillet and pour the wines over the top. Simmer 10-15 minutes, covered, until chicken is cooked through. Next dice up one small shallot and set aside. Pre heat a heavy gauge pan on high. Add about 2 tbsp of olive oil to the pan and add the steaks. Turn pan down to medium. Cook steak on each side for 5 minutes for rare. For a more done steak, cook on each side for 8 minutes. Then remove from pan and place the steaks in a oven proof and put them in a pre-heated 450 degree oven for 10 minutes. This will give you a medium well to a well done steak. Tomato Soup Recipe This wonderful tomato soup recipe comes from the Bistro Jeanty restaurant in Yountville, California. It's one of many fantastic restaurant recipes in Napa Valley. You will need 2 1/2 lbs ripe/juicy tomatoes, 1/2 cup butter, 1/2 pound of onion, 6 garlic cloves, 1/4 c of tomato paste, 1 bay leaf, 1/2 Tb. pepper corns, 1 tsp. thyme, 4 cups heavy cream, 1 tbsp butter. Salt to taste, 1/2 tsp white pepper, 1 lb. puff pastry, 1 egg. Procedure: Melt the ½ cup butter in a large stockpot over medium-low heat. Add the onions, garlic, thyme, bay leaf and peppercorns; cover and cook for about 5 minutes. Do not let the onions color. Add tomato paste and lightly "toast" the tomato paste to cook out the raw flavor the add tomatoes, and water if needed. Simmer over low heat for 30-40 minutes, until the tomatoes and onions are very soft and broken down. Puree by passing through a food mill. A food mill works best however you may use a blender in batches or a handheld immersion blender until finished, the strain. Return the soup o the pot. Add the cream, salt, white pepper and remaining butter to taste. Bring soup to a simmer then remove from heat. Allow the soup to cool for two hours or overnight - in the refrigerator. Divide the soup among six 8-ounce soup cups or bowls. Roll out the puff pastry to 1/4 inch. Cut into 6 rounds slightly larger than your cups. Paint the dough with the egg wash and turn the circles, egg wash side down, over the tops of the cups, pulling lightly on the sides to make the dough somewhat tight like a drum. Try not to allow the dough to touch the soup. These may be made up to 24 hours in advance and covered with plastic in the refrigerator. Preheat oven to 450 degrees. Lightly paint the top of the dough rounds with egg wash with out pushing the dough down. Bake for 10-15 minutes, until the dough is golden brown. Fish Taco Recipe This fish taco recipe from Jason Hill is a Mexican favorite, originating in Baja, Mexico, and popularized with Rubio's Fish Taco recipe in Mission Bay, San Diego. This video shows you how to make grilled fish tacos along with Jason's fish taco white sauce. Serve alongside a cold Corona beer. Ole! Fish Taco Recipe Serves four • 2 six ounce pieces of white fish (I use mahi mahi) • 2 cups of my lemon herb marinade. • 8 corn tortillas. • 2 cups of shredded cabbage. • 1 fresh diced tomato • small bunch of fresh cilantro • 1 cup of fish taco white sauce First rinse thawed fish under cool water and pat dry. Next, place fish in a plastic bag and pour the marinade over the fish. Seal bag and mix around with your hands. Marinade in the refrigerator no more than thirty minutes. Next, dice one tomato, and shred up some cabbage. Then go start your grill. If you don't have a grill, or BBQ, then you can either fry or bake your fish.
